The menu features contemporary Australian cuisine inspired by both French and Japanese cooking. Chef de Cuisine Shaun Langdon has carefully selected the best local ingredients, many of which are unique to the island, to create a series of mouthwatering dishes.
 
 
Seafood enthusiasts can enjoy the Hand Shucked Rock Crab, a light dish of freshly shucked crab, baby vegetables, flowers, herbs and lime ice that is a perfect complement to the year round balmy climate of Hainan and the idyllic beachfront surroundings of Fresh. The Suckling Pig with crisp skinned confit, roasted baby carrots, apple puree and cider jus offers a modern interpretation of this classic dish, and those with a sweet tooth can sample a ‘Cherry Ripe’ – a Valrohna mousse dessert with pop rocks, cherry sorbet, and local young coconut jelly that is inspired by Australia’s oldest chocolate bar.
