Hainan Shishan Mutton
 
Recipes for this lamb include soup, fillets, red button stew, casserole, medicinal stew, the famous mutton hotpot, served on the bone, stewed soup with bamboo shoots and pickled vegetables, stewed scalded slices of meat and skin as well as in sweet and sour soup.
 
The seasonings for Shishan mutton (石山壅羊) hotpot are what give the dish its unique flavour. As well as the cooking broth, ginger, minced garlic, sesame oil, MSG, fried crushed sesame seeds or peanuts, vinegar and so on are all used. This gives the dish a sweet, fragrant flavour with a slightly hot and sour taste.
